24 Cookies
Ingredients:
- Rolled Oats: 2.5 cups (250 g)
- Pumpkin Puree: 1 cup (240 g)
- Maple Syrup: 3 tbsp
- Pumpkin Spice: 1 tsp (or mix of ground cinnamon, nutmeg, ginger, cloves)
- Pecans: ½ cup
- Optional: Dairy-free chocolate chips: ½ cup
Instructions:
- Pre-heat oven to 350 °F /175 °C
- Mix all ingredients in a bowl to form a thick dough
- Create 24 cookies using a teaspoon (slightly round and flattened)
- Place cookies on baking sheet (you can use parchment paper)
- Bake for 10-12 minutes
