24 Cookies

Ingredients:

  • Rolled Oats: 2.5 cups (250 g)
  • Pumpkin Puree: 1 cup (240 g)
  • Maple Syrup: 3 tbsp
  • Pumpkin Spice: 1 tsp (or mix of ground cinnamon, nutmeg, ginger, cloves)
  • Pecans: ½ cup
  • Optional: Dairy-free chocolate chips: ½ cup

Instructions:

  • Pre-heat oven to 350 °F /175 °C
  • Mix all ingredients in a bowl to form a thick dough
  • Create 24 cookies using a teaspoon (slightly round and flattened)
  • Place cookies on baking sheet (you can use parchment paper)
  • Bake for 10-12 minutes
