8 Cookies

Ingredients:

  • Banana: 1 large ripe
  • Shredded Coconut: 1 cup unsweetened
  • Cardamom powder: 1 tsp
  • Ginger powder: 1 tsp

Instructions:

  • Pre-heat oven to 350 °F /175 °C
  • Mash the banana with a fork in a bowl
  • Add shredded coconut
  • Add cardamom and ginger
  • Mix – validate that the dough is not too wet and sticky to cold cookies (if it is, add more coconut)
  • Shape the cookies into balls on a baking sheet and press them to about 0.2 inch thick cookies
  • Bake for about 20 minutes, until golden brown
