8 Cookies
Ingredients:
- Banana: 1 large ripe
- Shredded Coconut: 1 cup unsweetened
- Cardamom powder: 1 tsp
- Ginger powder: 1 tsp
Instructions:
- Pre-heat oven to 350 °F /175 °C
- Mash the banana with a fork in a bowl
- Add shredded coconut
- Add cardamom and ginger
- Mix – validate that the dough is not too wet and sticky to cold cookies (if it is, add more coconut)
- Shape the cookies into balls on a baking sheet and press them to about 0.2 inch thick cookies
- Bake for about 20 minutes, until golden brown
